Here’s a recipe to help use up your Xmas lunch leftovers!
Christmas Left Over Pie
Ingredients for hot water pastry
450g Plain flour
100g strong white bread flour
75g cold unsalted butter, cut in to roughly 1cm dice
200ml cold water
½ tsp salt
100g lard
Beaten egg yolk to glaze
Filling
500g stuffing
12 cooked chipolata sausages
240g cranberry sauce
Method
1 Preheat the oven 200 C and grease a loaf tin.
2 Combine the flours in a bowl add the butter and rub in lightly with your
fingertips.
3 Heat the water, salt and lard into a saucepan until boiling and mix together
with the flours with a spoon. Once cool knead into a smooth dough.
4.Working as quickly as you can (as the pastry will go crumbly as it cools), roll
out 2/3rd of the pastry to line the tin.
5. Press 1/3rd of the stuffing into the pastry, cover this with 1/3rd of the turkey,
spread a 1/3rd of the cranberry sauce over the turkey.
6. Repeat with another layer of stuffing add sausage top with cranberry sauce
add more, add more turkey finish with one more layer of stuffing, turkey then
cranberry.
7. Brush pastry with egg, roll out the rest of pastry to make a lid.
8. Bake for 30 minutes then turn heat turn down to 180 C and bake for 45
minutes and leave to cool.
Eat cold with pickles or hot with gravy and ENJOY!
